I have such a sweet treat for you today friends, quite literally!
I have wanted to share this recipe with you ever since Christmas when I started making these. One of Kyle’s coworkers liked them so much that she asked me to make a few dozen for her Christmas get-together, which was so kind!
These gooey butter cookies are so quick and easy, the only thing that takes much time is getting your butter and cream cheese to room temp and then waiting for the cookie dough to chill.
I’ll keep this post short and extra sweet and if you have any questions, feel free to let me know down in the comments! One thing that I truly love about this recipe is how few ingredients there are and many of these you probably already have in your fridge or pantry!
I slice the stick of butter thinly and the cream cheese into smaller chunks so that it’s a little easier for it to cream together.
Next, I add in the vanilla extract and egg to combine, and then slowly add in the white cake mix until the dough forms into a smooth, sticky texture. I chill the dough overnight, but if you want to bake them the same day, just be sure to chill it at least an hour in the fridge.
Scoop and roll into balls, dip into sprinkles and then into powdered sugar. Bake at 350 for about ten minutes and let rest on the cookie sheet for a couple of minutes before moving them over to a wire rack to cool.
Then you’re tasked with trying not to eat them all in one sitting, haha!
Gooey Butter Cookies
Ingredients
- 1 Stick Unsalted Butter (room temperature)
- 1 8 oz. Package 1/3 Less Fat Philadelphia Cream Cheese (room temperature)
- 1 Egg
- 1 Teaspoon Vanilla Extract
- 1 Pillsbury White Cake Mix
- 3/4 Cup Powdered Sugar
- 3/4 Cup Sprinkles
Instructions
- Be sure to set out your butter and cream cheese to room temperature before you begin making your cookie dough.
- Preheat oven to 350 degrees.
- Cut butter into thin slices and cream cheese into small chunks, then cream together in a mixer.
- Add vanilla extract and egg, mix until combined.
- Slowly add cake mix into cookie dough while mixing on low. It will be a smooth, sticky texture.
- Transfer dough into a medium bowl and cover with saran wrap. Refrigerate for at least an hour, but it's best overnight.
- Once chilled, scoop cookie dough and roll into balls. Roll the dough in sprinkles first, and then into powdered sugar.
- Bake cookies at 350 for about ten minutes and allow to rest on pan for a couple of minutes before moving to wire rack to cool.

This recipe makes 3 dozen cookies.

Oh, I did not realize you used white cake mix to make these. Yum!! There isn’t a ton of ingredients either, so that makes them easy!! I need to try these sometime soon!
