It feels like an eternity since I wrote one of these life recap posts, friends!
I have been wanting to write this post for so long now, but just couldn’t seem to get into the swing of things. As many of you know who follow my Instagram stories, my grandpa has been very sick for the past month. I really haven’t put the time into the blog that I should have recently, but I truly hope to get back into a routine very soon.
Truly, I miss writing posts in general and creating new content for all of you, and just checking in with each of you. I am SO behind on my blog reading and it makes me feel terrible. It’s one of my favorite things to do, and yet I just haven’t been able to get myself to stop and read all this time.
Ironically, I am writing this on the same day my grandpa passed away (though it won’t be posted until a week or so later). He passed this morning, and I appreciate all of the sweet words, prayers and hugs that have been sent my way in just this afternoon. I will never be able to express how much it all means!
Jumping back into this recap, I’ll try to dive into some things that have been a part of life lately!
1-Day King’s Island Trip
My husband’s siblings and their spouses planned a fun day trip to King’s Island a couple of weeks ago. It was great!
For those of you who may not have heard of it, it’s an amusement park that is in Cincinnati, Ohio. It’s about two hours away from us, so a bit of a drive, but well worth it. I am not a roller-coaster fanatic by any means, but that didn’t stop my sister-in-law from trying to get me on every single one of them. She also laughed at me on the ones that I did get on!
In fairness, I think everyone laughed at me because I prayed out loud for the entirety of the three roller coasters I was on, haha. Everybody learned about Jesus while I was on those!
Around noon, Kyle and I stayed behind and grabbed some lunch. It was super hot out and we were starting to get sick. I was amazed at how pricey everything was in there, but I shouldn’t be – I think it’s pretty normal at any of the amusement parks to be more expensive. Kind of like when you go to the movies and they charge you $10 for popcorn.
We decided on a Mexican restaurant like Chipotle or Hot Head Burritos. I got a chicken burrito bowl with brown rice and pico, and Kyle got a chicken burrito with queso and pico. It wasn’t as good as the other places and certainly not as cheap (they wanted $15 for each of those!), but still helped fuel us for the rest of the day.
We grabbed a grande Caramel Ribbon Crunch Frappuccino to share while we were walking, too!
Our nieces and nephews were having a blast and really made the trip. They enjoyed riding on big coasters and driving in the antique cars. It was so sweet to watch them have so much fun.
New Traditions
For the past couple of months, I’ve started visiting my father-in-law once a week for a lunch date. I have enjoyed them so much, and I think he does too, so it’s definitely a new weekly tradition.
My FIL has had his fair share of sickness and after watching what my grandpa has been going through, I have really been hyper focused on trying to be there for those I care about.
These weekly lunch dates have been one of the best things for me and only wish I had been doing it all along.
Fishing Fridays
Soon after I started the weekly lunch dates with my FIL, I started fishing with my husband Kyle on Fridays.
Kyle used to be a golfer through-and-through (it’s still in my blog’s bio!), but this year he has been totally invested in fishing and maybe golfed two times so far.
He really enjoys it and I do too, mostly for spending time with him. It is fun to catch fish, too! We throw them back, and just do it for fun. I’ve shared some fishing pictures in my last recap, but here are some more! There sure are some pretty paylakes out there, friends.
A New TV Show Obsession
My sister-in-law and I started binging a new-to-us TV show called Queen Sugar. It is phenomenal!
If you haven’t watched it and you have Hulu, you should definitely check it out! I am officially caught up completely through the sixth season. There will be a seventh (and final) season coming in September, so I’m excited for when it comes out.
It has been fun to watch it together because she would usually be ahead of me, I’d have to try to catch up, and then she would be even farther ahead, haha! I finally got ahead of her last week and then decided to just finish it out, so now I’m waiting on her to catch up!
I’d love to hear some of your favorite shows you’re watching now, or that you have watched before that you enjoyed. Going through all this family sickness lately, I think it’s been helpful to have a show to focus on and get my mind off of things.
Dinner Recipes in Rotation
I’ve been married almost seven years now and I feel like I’m just now starting to figure out this dinner thing. Does anyone else feel the same?
While I am very much still figuring it out, I’ve been trying some new, but simple, dinner recipes that are on the healthy-ish side for us. It’s been neat to see what’s been a hit and a miss.
The new favorite in the Burchett household is my turkey cornbread casserole. It’s quick and easy, delicious, and comes together in 45 minutes! Let me know if you’d like me to create a post for the recipe.
Some of the other recipes I’ve tried are homemade burrito bowls with chicken, chicken breasts in a thick, homemade ranch sauce, salsa verde enchiladas, and meatloaf.

I try to do a Friday Five once a month to do a little monthly recap. I feel it is my most time consuming post, tho! I will add Queen Sugar to my list of shows to watch. I think we have one season of Outlander to catch up on and then if they come out with the new season of Handmaids Tale I want to watch that. But, the Queen Sugar looks good!! I should try and do a weekly lunch with my parents. Or try to do it more than I do now. Your fishing adventures sound fun! I would prob just bring a cool drink and read the entire time and try to avoid fishing! I just enjoy sitting outside! Lol!

I always love your monthly recaps, they are so fun! I can definitely understand those being more time consuming though! I’ve heard Outlander is a good show, and I did try the Handmaid Tale, but it made me so sad in the beginning I couldn’t push through it. Maybe I will someday though! Haha, nothing wrong with sitting back, reading, and enjoying the scenery instead of fishing. 🙂

I have to say how sweet that your hubby commented on this post!! It was fun reading this recap, I’m not a roller coaster person either and you made me LOL about saying prayers on the rides:-) Friday fishing looks relaxing and how fun that you do it together. I would highly recommend you watch “The Chosen” it’s a bit slow the first few episodes as you put things together but it picks up and is so well worth it. The way Jesus is portrayed is powerful and refreshing, it’s been such a blessing on top of great entertainment.

Kings Island looked great. ” I prayed the whole time” LOL. For me it is beach Fridays. I will have to check out that show I am always looking for something to watch.

Haha, I really did!! Beach Fridays sounds perfect, and so relaxing. We aren’t nearby any beaches, but I love to walk along them on vacation.
